Ingredients.
2 cups. basmati rice
1 pound boneless, skinless chicken breasts, sliced
2 tbsp cooking oil 1 finely chopped onion
1 teaspoon of ginger paste
1 tablespoon minced garlic
1 tablespoon cumin
1 teaspoon cilantro
1 tsp. garam masala
1 tablespoon cayenne pepper
1 cup water, salted to taste
2 tablespoons chopped fresh cilantro 1 cup chicken broth
1 tomato (cut into slices)
12 tablespoon chopped mint leaves
Instructions:
Rinse the rice in a fine mesh strainer and soak it for 30 minutes in water.
Heat the oil in a large saucepan.
Cook for 5 minutes, or until the onion is soft and translucent.
Combine the ginger and garlic pastes, cumin, tomato, coriander, garam masala, cayenne pepper, and salt in a mixing bowl. Cook for 1 minute longer, or until the spices are fragrant.
Cook the chicken in the pan for 5-7 minutes, or until it is cooked through.
Pour in the water and chicken broth to the pan. Bring the ingredients to a boil.
Drain and add the rice to the pan. To combine, gently stir everything together.
Cook for 20 minutes after lowering the heat to low and covering the pan with a lid.
