Chole Bhature is a popular dish from North India, It is a combination of spicy chickpea curry (chole) and deep-fried bread (bhature). It's often served as a breakfast dish, but can also be enjoyed as a lunch or dinner dish. Here's a recipe for making Chole Bhature at home:

Ingredients:

For the Chole:

·    1 cup dried chickpeas, soaked overnight

·    3 cups water

·    2 bay leaves

·    1 cinnamon stick

·    2 green cardamom pods

·    1 teaspoon cumin seeds

·    1 teaspoon coriander powder

·    1 teaspoon red chili powder

·    1 teaspoon amchur powder

·    1/2 teaspoon turmeric powder

·    1 teaspoon garam masala powder

·    1 teaspoon salt

·    1 tablespoon oil

·    2 onions, chopped

·    2 tomatoes, chopped

·    2 cloves of garlic, minced

·    1-inchch piece of ginger, minced

For the Bhature:

·    2 cups all-purpose flour

·    1/2 teaspoon yeast

·    1/2 teaspoon sugar

·    1/2 teaspoon salt

·    1/4 cup yogurt

·    1/4 cup warm water

·    Oil for deep-frying

Instructions:

To make the Chole, drain the soaked chickpeas and add them to a pressure cooker with 3 cups of water, bay leaves, cinnamon sticks, and green cardamom pods. Cook for about 4-5 whistles or until the chickpeas are tender. Drain the chickpeas and reserve the cooking liquid.

In a pan, heat the oil over medium heat and add the cumin seeds. Once they start to sizzle, add the onions and sauté until they turn translucent.

Add the ginger and garlic and sauté for another minute.

Add the tomatoes and sauté until they turn soft and mushy.

Add the coriander powder, red chili powder, amchur powder, turmeric powder, garam masala powder, and salt. Sauté for about 2-3 minutes, or until the spices are fragrant.

Add the cooked chickpeas to the pan and pour in about 1 cup of the reserved cooking liquid. Simmer for about 10 minutes, or until the sauce thickens.

To make the Bhature, mix together the flour, yeast, sugar, and salt in a large mixing bowl.

Add the yogurt and warm water and knead the dough until it becomes smooth and elastic.

Cover the dough and set it aside in a warm place to rise for about 1 hour.

Once the dough has risen, knead it again and divide it into 10-12 equal portions.

Roll each portion of dough into a ball and then flatten it with a rolling pin to form a 3/4 inch thickness.

Heat the oil in a deep fryer or large pan to 350F. Gently slide the bhature into the hot oil and deep-fry for about 2-3 minutes on each side, or until golden brown.c

Drain the bhature on a paper towel-lined plate.

Serve the Chole Bhature hot, and it's perfect with some yogurt, green chutney, and some onion on the side.
